7 Layer Tortilla Pie

Last night I tried this new recipe I found on allrecipes.com (brilliant website by the way). I tweeked it just a lil bit. I was so happy with how it turned out and it was so simple to make! If you're in the mood for some Mexican food, give this a shot.

You'll need:
2 cans refried beans
1 cup salsa
2 cloves minced garlic
1 can black beans, rinsed
1/2 cup chopped tomatoes
7 tortillas
2 cups shredded cheese
sour cream
olives
avocados

1. Preheat oven to 400 degrees.
2. Mix refried beans, 3/4 cup salsa, and garlic in a bowl.
3. Mix black beans, 1/4 cup salsa, and tomatoes, in a separate bowl.
4. Now comes the fun part: Place 1 tortilla in a pie plate. Spread 3/4 cup pinto bean mixture over tortilla. Top with 1/4 cup cheese and cover with another tortilla. Spread 2/3 cup black bean mixture and top with 1/4 cup cheese. Repeat layering twice. Cover with remaining tortilla and spread with remaining pinto bean mixture and cheese.
5. Cover with foil and bake for 35-40 minutes. Cut like a pie and top with sour cream, olives, and avocados if you so desire :)
*Serves 6

The bottom layer kind of stuck. . But it was still delicious!

Happy Birthday Dallan!

Dallan's birthday was January 7th. He turned 24! On Sunday we celebrated with the fam. My mom made his pick for dinner, I made some cupcakes, and the Briggs brought the game 'Disney Hedbanz' Ash got for Christmas to play. It was a fun night!


Dallan is one of my best friends and has been my whole life. Growing up he was the sibling I was closest to. We shared a room for a long time, probably until I was 10 or so. We even took piano lessons at the same time. One time for our recital we did a duet. We were almost at the end of the song and I totally spaced out and forgot where we were. I had to stop and ask him and he pointed to the sheet music and said, "Right there." He didn't get mad at me for ruining the song. He didn't even make fun of me afterwards. He's a sweetheart that brother of mine.

In high school when he was a senior, I was a sophomore. It was so great to have him there for my first year of high school. I remember feeling calm knowing my brother was in the building and would be able to be there in an instant if I needed anything. We had a lot of fun that year carpooling, going to football games, and we even were in the same group for a dance. A lot of older brothers don't want their little sister hanging around with their friends. Not mine, I'm a lucky little sister :)

This past year we were chillin at the pool and these two girls walked by with giant gorgeous legs. I said something like, "Holy, I wish I had legs like that!" And Dallan said, "You know what they're thinking? They're wishing they had something of yours." Dal loves me when I forget to love myself. He constantly reminds me of how much I'm worth and that I deserve the best out of life. Thanks Dal for always loving me and helping me throughout life! I love you bro. Happy Birthday!

Baby Cakes!

For Christmas we draw names for gift giving. This year Justin had me (and with a little help from Ashlee) he got me a babycake cupcake maker!! Oh man it's the best. I LOVE it! Thanks Justin (and Ash)!

It makes 8 mini cup cakes at once! And it only takes 5-8 minutes to bake them! Genius.

For my first try with it, I made pumpkin cupcakes. My parents got me this sweet cupcake recipe book for Christmas (does my family want me to make cupcakes for them? Are they hinting something here. . ;)) This recipe was SO good!

Plus, look how cute they turn out!

You'll need:
1 1/2 cups sugar
3/4 cups softened butter
3 eggs
1 can (15 ounces) solid-pack pumpkin
1 cup buttermilk
3 cups flour
1 tablespoon baking powder
2 teaspoons ground cinnamon
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1/4 teaspoon ground allspice
1/4 teaspoon ground nutmeg
1/8 teaspoon ground ginger

1. Beat sugar and butter in a large bowl with electric mixer until light and fluffy. Add eggs, one at a time, beating well after each.
2. Combine pumpkin and buttermilk in a bowl, mix well. Combine flour and the rest of the dry ingredients in a separate bowl. Alternate adding the pumpkin mixture and flour mixture to the butter mixture (make sense??), beating well after each addition.
3. If you sadly, don't have a babycake maker, preheat your oven to 350 degrees and bake cupcakes for 20-22 minutes. It'll make 24 cupcakes. If you use a babycake maker, bake for 6 minutes, and it'll make about 40.

Maple Frosting:
Beat 3/4 cup softened butter in large bowl until fluffy. Add 3 tablespoons maple syrup and 1/2 teaspoon vanilla, beat until well blended. Gradually add 3 1/2 cups powdered sugar, beating until fluffy. Add 1 or 2 tablespoons of milk if needed for the right consistency. Makes 2 1/2 cups.

Veggie Tortilla Soup

I came across this recipe online. I love avocados, so I thought I'd give it a shot. . . . . And holy yum! I was surprised by how delicious this was. Plus it was super easy to make! I've made it twice for the fam in the past month, we love it! It serves twelve and we're happy to eat the leftovers :)


2 tablespoons vegetable oil
1 chopped onion
1 chopped red pepper
2 cloves garlic, minced
1 1/2 tablespoons ground cumin
1 can crushed tomatoes
2 cans chopped green chile peppers
3 cans (14 oz) vegetable broth
1 can corn
2 cans black beans
2 cans pinto beans
2 diced avocados
tortilla chips

1. Heat oil in a large pot on medium heat, stir in onion, red pepper, garlic, and cumin. Cook for 5 minutes or until veggies are tender.
2. Mix in tomatoes, chile peppers and vegetable broth. Bring to a boil.
3. Reduce heat to low. Add corn, black beans, and pinto beans. Mix and let sit for 5-10 minutes.
4. Add avocado and chips before serving.
5. Eat to your heart's content :)

Christmas Cookies

For Christmas dessert I made 2 different kinds of cookies. I made these Reindeer Sugar Cookies first:

The original recipe used peanut butter cookies, but Dal is allergic to peanuts and I didn't want to risk a trip to the hospital on Christmas. What I didn't think through was that sugar cookies are thinner than most cookies, which made it difficult for the 'antlers' to stay. However, after much trial and error, help from my dad, and help from an egg-shaped cookie cutter he changed to 'reindeer shaped', we got the pretzel antlers to stay :) Thanks dad for your help! And thanks to my mom for tasting the dough before I rolled it out. I forgot the sugar, talk about gross- don't know how that happened! Haha.

I also made Chocolate-Peppermint Wafer Cookies. These are seriously so delicious!

The only thing I changed was I used milk chocolate instead of semi or bittersweet. Milk chocolate is the best :)

*Helpful Hint* Again, after much trial and error, and help from my parents, we found the best way to melt the chocolate and not overheat it, was to melt it in the microwave at 30 second intervals, stirring in between.

100 Things About Me

I think posting 100 things about yourself was the popular thing on blogs a loooong time ago, but I didn't have a blog then, so here it is now :)

1. I never leave home without my chapstick.
2. I am a total germaphobe.
3. I never liked reading until I read The Hunger Games, now i love reading!
4. I have 2 brothers and 2 sisters.
5. I have the most adorable nephew in the whole wide world.
6. I brush my teeth at least 3 times a day.
7. I LOVE Harry Potter. I read them all for the first time in two months this year.
8. I don't like animals, like at all.
9. I love stormy nights when I'm falling asleep and I hear rain hit my window.
10. My perfect vacation would include the beach, a hammock, and taco bell.
11. I really don't like driving in the slightest degree.
12. My brother Dallan makes me laugh harder than anyone on this planet.
13. I write in my journal every single night.
14. I love when Christmas falls on a Sunday.
15. I was in choir in high school. Mostly because it was an extra curricular activity that didn't include A) sweating, or B) waking up early.
16. I hate my hair pulled back.
17. I've never had a pet, and I'm not upset about it.

20. I've tried to learn how to drive a stick shift 3 times. From 3 different people. Can't do it.

24. When I was in elementary school I wanted to marry Aaron Carter. His concert was my first.
25. I don't understand much about politics. And I don't pretend to.
26. I'm a people watcher, possibly to the point of being creepy.
27. I love to swim.
28. I've started to learn how to cook. I love it!
29. My biggest struggle is insecurity, but I work at it every day :)
30. I don't like dreaming. I either wake up confused, or not well-rested.

33. I don't have my ears pierced. The idea of having a hole in my ear and putting something through it freaks me out.

68. Kit Kats + The Notebook= the perfect remedy after a breakup.
69. I like to watch hockey.
70. I want to learn how to surf. I think it's so neat.
71. I don't find anything about Jim Carrey funny, but everything about Steve Carrell hilarious!

Is that you??

I got an ad in the mail from Kohl's and saw that Jennifer Lopez now has a clothing line. I got to thinking, why are people more enticed to buy clothes just because a celebrity designed/wore it?


I remember back in high school I took a fashion class. I had to look through magazines for an assignment to find specific styles of clothing. In a magazine for teens I remember coming across something like this:

The magazine showed exactly where to buy these items and how much they cost. If we can't come up with jeans, flip flops, and a hoodie on our own, I don't have much hope for the world!

I find our society's obsession with celebrities kind of fascinating. Mostly I just don't understand it and am surprised at what people do with influence from a celeb. Lindsay Lohan wore this $575 dress to a court appearance. It immediately sold out. Why? I have my theories. .


A) It was a cute dress.
B) People think they'll become a celebrity if they look like one.
C) People don't know who they are, so they copy people who they feel they know.

It seems to me there are a lot of people out there who don't know, deep down, who they are. They just go through the motions of life and don't stop to think or make self discoveries. So they try to be other people because they can't be themselves. You can't be someone you don't know. Wearing a dress Lindsay Lohan wore won't make you feel good about yourself. If you're wearing it strictly because she did, you aren't being yourself at all, and how would that make yourself happy?

The next time you're out shopping, and you see something you like, don't think, 'who designed this?' or 'would a Kardashian wear it?' Wear what looks like you.
