What a Lovely Song.

I heard this song by Safetysuit called 'Never Stop' and I fell in love with it! If only every guy felt this way about his girl, and if only every girl felt she deserved this of her man. Songs like these remind me that I have something great to look forward to one day. I think some people settle when they get married, but hearing this song makes me want to shout to the world that it'll be worth the wait :)

7 Layer Tortilla Pie

Last night I tried this new recipe I found on allrecipes.com (brilliant website by the way). I tweeked it just a lil bit. I was so happy with how it turned out and it was so simple to make! If you're in the mood for some Mexican food, give this a shot.

You'll need:
2 cans refried beans
1 cup salsa
2 cloves minced garlic
1 can black beans, rinsed
1/2 cup chopped tomatoes
7 tortillas
2 cups shredded cheese
sour cream
olives
avocados

1. Preheat oven to 400 degrees.
2. Mix refried beans, 3/4 cup salsa, and garlic in a bowl.
3. Mix black beans, 1/4 cup salsa, and tomatoes, in a separate bowl.
4. Now comes the fun part: Place 1 tortilla in a pie plate. Spread 3/4 cup pinto bean mixture over tortilla. Top with 1/4 cup cheese and cover with another tortilla. Spread 2/3 cup black bean mixture and top with 1/4 cup cheese. Repeat layering twice. Cover with remaining tortilla and spread with remaining pinto bean mixture and cheese.
5. Cover with foil and bake for 35-40 minutes. Cut like a pie and top with sour cream, olives, and avocados if you so desire :)
*Serves 6

The bottom layer kind of stuck. . But it was still delicious!

Happy Birthday Dallan!

Dallan's birthday was January 7th. He turned 24! On Sunday we celebrated with the fam. My mom made his pick for dinner, I made some cupcakes, and the Briggs brought the game 'Disney Hedbanz' Ash got for Christmas to play. It was a fun night!


Dallan is one of my best friends and has been my whole life. Growing up he was the sibling I was closest to. We shared a room for a long time, probably until I was 10 or so. We even took piano lessons at the same time. One time for our recital we did a duet. We were almost at the end of the song and I totally spaced out and forgot where we were. I had to stop and ask him and he pointed to the sheet music and said, "Right there." He didn't get mad at me for ruining the song. He didn't even make fun of me afterwards. He's a sweetheart that brother of mine.

In high school when he was a senior, I was a sophomore. It was so great to have him there for my first year of high school. I remember feeling calm knowing my brother was in the building and would be able to be there in an instant if I needed anything. We had a lot of fun that year carpooling, going to football games, and we even were in the same group for a dance. A lot of older brothers don't want their little sister hanging around with their friends. Not mine, I'm a lucky little sister :)

This past year we were chillin at the pool and these two girls walked by with giant gorgeous legs. I said something like, "Holy, I wish I had legs like that!" And Dallan said, "You know what they're thinking? They're wishing they had something of yours." Dal loves me when I forget to love myself. He constantly reminds me of how much I'm worth and that I deserve the best out of life. Thanks Dal for always loving me and helping me throughout life! I love you bro. Happy Birthday!

Baby Cakes!

For Christmas we draw names for gift giving. This year Justin had me (and with a little help from Ashlee) he got me a babycake cupcake maker!! Oh man it's the best. I LOVE it! Thanks Justin (and Ash)!

It makes 8 mini cup cakes at once! And it only takes 5-8 minutes to bake them! Genius.

For my first try with it, I made pumpkin cupcakes. My parents got me this sweet cupcake recipe book for Christmas (does my family want me to make cupcakes for them? Are they hinting something here. . ;)) This recipe was SO good!

Plus, look how cute they turn out!

You'll need:
1 1/2 cups sugar
3/4 cups softened butter
3 eggs
1 can (15 ounces) solid-pack pumpkin
1 cup buttermilk
3 cups flour
1 tablespoon baking powder
2 teaspoons ground cinnamon
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1/4 teaspoon ground allspice
1/4 teaspoon ground nutmeg
1/8 teaspoon ground ginger

1. Beat sugar and butter in a large bowl with electric mixer until light and fluffy. Add eggs, one at a time, beating well after each.
2. Combine pumpkin and buttermilk in a bowl, mix well. Combine flour and the rest of the dry ingredients in a separate bowl. Alternate adding the pumpkin mixture and flour mixture to the butter mixture (make sense??), beating well after each addition.
3. If you sadly, don't have a babycake maker, preheat your oven to 350 degrees and bake cupcakes for 20-22 minutes. It'll make 24 cupcakes. If you use a babycake maker, bake for 6 minutes, and it'll make about 40.

Maple Frosting:
Beat 3/4 cup softened butter in large bowl until fluffy. Add 3 tablespoons maple syrup and 1/2 teaspoon vanilla, beat until well blended. Gradually add 3 1/2 cups powdered sugar, beating until fluffy. Add 1 or 2 tablespoons of milk if needed for the right consistency. Makes 2 1/2 cups.
