7 Layer Tortilla Pie

Last night I tried this new recipe I found on allrecipes.com (brilliant website by the way). I tweeked it just a lil bit. I was so happy with how it turned out and it was so simple to make! If you're in the mood for some Mexican food, give this a shot.

You'll need:
2 cans refried beans
1 cup salsa
2 cloves minced garlic
1 can black beans, rinsed
1/2 cup chopped tomatoes
7 tortillas
2 cups shredded cheese
sour cream
olives
avocados

1. Preheat oven to 400 degrees.
2. Mix refried beans, 3/4 cup salsa, and garlic in a bowl.
3. Mix black beans, 1/4 cup salsa, and tomatoes, in a separate bowl.
4. Now comes the fun part: Place 1 tortilla in a pie plate. Spread 3/4 cup pinto bean mixture over tortilla. Top with 1/4 cup cheese and cover with another tortilla. Spread 2/3 cup black bean mixture and top with 1/4 cup cheese. Repeat layering twice. Cover with remaining tortilla and spread with remaining pinto bean mixture and cheese.
5. Cover with foil and bake for 35-40 minutes. Cut like a pie and top with sour cream, olives, and avocados if you so desire :)
*Serves 6

The bottom layer kind of stuck. . But it was still delicious!
